Early European Settlers in America
When European settlers first arrived in America, lobsters were extremely plentiful and easy to come by. While lobsters had been a food source for Native Americans, they were so abundant that they also used these to fertilize their crops and as fish bait. Of course, the easier it is to access something, the less special it feels. With lobsters being so easy to get, it was extremely inexpensive, meaning that they became a common low-class meal, even being served regularly in prisons. Lobster provided people with a good source of protein, but it wasn’t something many enjoyed. This is completely unlike what we think of lobster today.
How Views on Lobster Changed
While lobster was often something eaten out of necessity on the coast, those who lived more inland in America weren’t familiar with it, as it would have been completely inaccessible. However, this changed when railroads were implemented and travel became easier in the 1800s. Methods for canning were also created, making it possible to transport the food inland and sell it to a wider audience. Unlike those on the coast, these consumers weren’t aware of the negative reputation that lobster had, and it became much more well-liked.
Not only was shipping canned lobster a popular practice thanks to advancements in transportation, but travel also became much more common. More people could now travel to New England, where the canned lobster they loved came from. Of course, tourism can bring in a huge amount of money, so lobster became more of a delicacy there to attract visitors.
The way it was cooked also improved, and naturally, so did the taste. It is typically cooked alive today, as once a lobster dies, it begins to go bad extremely quickly. Learning new ways of making lobster into the delicious dish we know it to be today only helped improve public opinion of it.
During World War II, many common foods were rationed, while lobster, by then a delicacy, was not. Due to this, this dish was extremely popular during this time, especially among the wealthy. This was one meal that could be enjoyed while other foods were difficult to come by, consumers could buy as much as they could afford, so long as it was available.
