Colossal Crab Stuffed Fire-Roasted Peppers
Stuffed peppers are a favorite of many, and one of the best ways to make this dish is by making it with one of the most popular types of shellfish. For our Chef’s Fresh Catch Dinner, we’ll be serving fire-roasted peppers stuffed with colossal crab to start things off. Colossal crab meat is some of the most coveted crab meat you can find and is known for having an exquisite, sweet taste. While fire-roasted peppers and crab meat have enough flavor on their own, we made this dish even more special by topping it off with herb bread crumbs and fresh pesto.
Seafood Ceviche
If you’ve never had the chance to enjoy this Peruvian dish, now is your chance. While it’s similar to salsa, seafood chive is a dish you’ll see far less often and can be very difficult to make correctly. This is due to the dish having raw fish, so it has to be expertly prepared. Rather than cooking the fish as you normally would, the fish in seafood ceviche is marinated in citrus juices. At Grico’s South, we’re using lemon and lime juice. Mixed with fire-roasted corn, avocado, pickled shallots, and fresh jalapeno, this dish is perfect to scoop up with fried tortilla.
Lobster Claw Ravioli
Of course, our dinner wouldn’t be complete without a pasta dish. If you like lobster tail, you might end up liking lobster claw even more. The muscles in the claw get used less than the tail, the meat is typically much more tender and has a sweeter taste. Stuffed inside ravioli, this dish perfectly combines seafood and pasta. However, this dish doesn’t stop at only lobster meat. We top it off with a crawfish Creole sauce that’s loaded with flavor to make this dish stand out even more.
Crispy Black Sea Bass
With lean meat and a mild flavor, black sea bass is a popular option for fish, even those who don’t typically enjoy seafood. Ours is served crispy and comes with grilled herb polenta cakes. This dish also has more than delicious fish. Our crispy black sea bass comes with chorizo etouffee. Etouffee is a classic dish in Creole and Cajun cooking where meat or seafood is cooked in liquid for a long period of time over low heat to get the most flavor. As ours is made with chorizo, highly-seasoned sausages, you can be sure it will taste amazing.
